feat: token onboarding correction

TICKET: COIN-6893

Updated the token symbol from 'HYPE:hwHYPE' to 'HYPEEVM:hwHYPE' to accurately reflect that the token's network is HyperEVM.
This chain is onboarded as 'HYPEEVM', not 'HYPE'.
