Update blockdag-scripts for Mainnet (docs show mainnet steps, repo still testnet)

Hi team,

I noticed a mismatch between the official docs and this repository:

• The Node Setup Guide in docs describes running a BlockDAG mainnet node:
  https://docs.blockdagnetwork.io/get-started/nodes-and-mining/node-setup-guide
• This repo and its README describe automation helpers for a BlockDAG testnet node:
  https://github.com/BlockdagNetworkLabs/blockdag-scripts

Request:
Could you please update blockdag-scripts to support mainnet (or provide a mainnet branch / updated docker-compose / config),
so the scripts match the current mainnet documentation?

If mainnet support already exists:

• please point to the correct branch/tag and any required environment variables / config changes.
