Backup Guide is incorrect

What happened?

Running cscli config backup fails with an error:
Error: 'cscli config backup' has been removed, you can manually backup/restore /etc/crowdsec instead

crowdsecurity/crowdsec#3158 removed cscli config backup, but no documentation was updated.
My backups have been failing since I updated and I had to go look for the PR that removed the backup command to understand why.

Please update the docs, especially https://docs.crowdsec.net/docs/preview/backup_guide/

What did you expect to happen?

cscli config backup worked and a backup was made
