Environment file needs a heavy refactor

As a user, I need to be able to read the config file so I can configure the demonstrator

Currently the env is a mix of things that really shouldn't be touched and things that must without any delineation 

 Would be better to arrange the env in different files so users can be told "edit this file **only**"
