Upgrade to YOLO V11

We should (consider) upgrading to YOLO V11 now that we will be integrating the ZED camera. Instead of a full transition to V11, it may be preferable to continue using V5 here in the Rust code base.

Tasks:

• Decide scope of upgrade (just for ZED, or replacing current usage of V5)
• If replacing V5, explore incompatibilities with any V5 specific functions (detect_yolo_v5)

We should explore other options other than just YOLO V11, perhaps also YOLO V8 as it is apparently better for motion related detection tasks (more research needed).
