Move Apple folder into Platforms

As part of the general cleanup of the repository to put all platform build tooling into the Platforms folder, we need to move the Apple folder to Platforms/Apple.

This is also an opportunity to clean up the legacy iOS folder, which only exists for historical buildbot compatibility.

Hi @freakboy3742, I would love to help out with this cleanup and take on this issue!

Here is my proposed plan to tackle this:

1. Move the Directory: Use git mv Apple Platforms/Apple to preserve the git history of the files being moved.
2. Clean up the legacy iOS folder: Investigate the iOS directory and remove the legacy buildbot compatibility files, migrating any still-needed configurations into the new Platforms/Apple structure.
3. Update Build Configurations & CI: Search for and update all path references pointing to the old Apple/ and iOS/ directories. This likely includes updating:
   • Build scripts like configure.ac and Makefile.pre.in
   • CI workflows in .github/workflows/
   • Relevant documentation pointing to these folders.
4. Testing: Build the project locally for Apple platforms to verify that the toolchain and scripts still function correctly with the new paths.

Primary move has now been completed; once the buildbot has been updated we can delete the legacy iOS folder.
