This patch removes PouchDB-Server from CI workflow.
Unblocks #8664 since PouchDB-Server isn't compatible to node v18+
coveragein package.json (uses pouchdb-server)BREAKING CHANGE: merging this patch has the indirect consequence of ending support for pouchdb-server and compatibility is no longer guaranteed.
