Clear select deprecated dev dependencies

Cleans up two of the older dependencies:

• replaces https://www.npmjs.com/package/@react-native-community/bob with https://www.npmjs.com/package/react-native-builder-bob in css-processor and transient-render-engine. render-html already had the new one installed.
• imports renderHook from @testing-library/react-native (see https://github.com/testing-library/react-hooks-testing-library?tab=readme-ov-file#details).
