Schema resiliency examples tests fix

Fixed examples to produce expected counts of tests except -

In schemaResiliencyTests: none, the number of tests are actually 3 not 6.

Fixed the same in README

Note - In examples/test_find_available_products_book_200.json - the examples response body is just empty. Actually array is not supported. But changing it will affect the schema.

We are therefore only passing an empty array, which specmatic also accepts.
